One of my all time favourite cakes to serve at Christmas and I don't bother mixing thing individually! No, it's an all in one and to be honest most cakes can be done this way, well, maybe not a Victoria sponge, eh!
Such an easy recipe and this is a 2lb loaf tin from Ikea! Half the ingredients for a 1lb loaf. Line and grease your tin well, as bigger loafs can be tricky to get out of the tin!
First chop a good handful of pistachios. Grate the rind of one orange or a couple of clementines.
Grab a bowl and pop in
2 cups of self raising flour
1 of almond flour
1.5 cups of melted butter (cooled)
2 teaspoons of baking powder (flat teaspoons)
1.75 cups of golden caster sugar
2 teaspoons total of mixed spice and ground cloves
4 small eggs or 3 large
handful of almond slices
Rind of a large unwaxed orange
handful of pistachios *save some for the top
1/4 cup of orange juice or squeeze a couple of clementines
Mix well and bake in a medium oven for 40/50 mins. With larger loaf increase the time but check at the 30 minute point and always check with a sharp point that it is baked all the way through.
Sprinkle golden caster sugar, a teaspoons of fresh orange juice, orange rind and sliced almonds and pistachios over the top.
