There's nothing like a spicy festive cake and a cuppa tea at Christmas!! This one is quite dense!
140 g of butter softened or use coconut oil
140 g of brown sugar or use honey/maple syrup
2 large eggs
170 g of Gluten Free self raising flour (measure for measure) or use normal SR if not GF
2 tablespoons of ground ginger
1 tablespoon of cinnamon and nutmeg
140 g of treacle
140 g of golden syrup
1/4 teaspoon of bicarbonate of soda
1 teaspoon of baking powder
1/4 teaspoon of xantham gum
Splash of milk
Cream together the butter and sugar and add the beaten eggs
Then slowly add the dry ingredients, mixing well.
Bake at 340 for 50 mins
