I don't know what you cook for Christmas lunch but for us it's ham, turkey, lots of pigs in blankets and not enough stuffing! The ham goes first! Normally I stick to my marmalade glaze but being in Canada this year, I'm mixing it up!
I take a raw ham and soak it over night. This draws any salt out. Then I par boil it, drain it and take a lot of the fat off, leaving just enough to score!
Next I pop the ham in a deep oven tray on a rack and pour most of the glaze over it. Wrap it in tin foil and bake for two hours! You can re glaze as you bake.
For the Maple Brown Sugar Glaze - mix well
1/2 cup pure maple syrup
1/3 cup brown sugar
2 good dollops of mustard
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
