I know it seems a bit early to be sharing this mid October, but a lot of folks like to get going early! Being prepared isn't a bad thing, right?
Not everyone is into a really boozy cake like I am! So this one uses tea soaked fruit and still has all the makings of a great Christmas cake! Best of all you can use your favourite blend of tea!
First weigh out 1kg of mixed dried fruits and soak these in your favourite tea blend for up to 3 days.
zest of two oranges
2 tsp of mixed spice
100 g of chopped nuts
250g of softened butter
250 g of brown sugar
4 large free range eggs
200 g of plain flour
1 teaspoon *flat of baking powder
1 teaspoon of vanilla extract
Cream the butter, sugar and vanilla together well. Add the eggs and then the flour and baking powder. Drain any extra liquid from the fruit and mix together with the cake mix.
Line and grease your tin with parchment paper. I would use a loose bottomed deep cake tin.
Pop the mix in and cover with brown or parchment paper.
Bake at 140/160 c for 70 mins. Check with a knitting needle and if clean it is done if not put back in the oven for another 10/15 mins at a time.
Cool throughly. Leave for a few days before decorating.
