I see. Climate change is real and we do need to get savvy with our meat consumption and soon. I have to say I have a limited diet already and I'm really partial to a big fat juicy steak but I do know this now has to be a teat rather than the norm now.
Dairy is also an issue due to the methane produced by cows and again I eat a lot of cheese! So I'm a bit grouchy about giving it up or cutting it down, but the planet will win in the end. Needs must and all that, eh?
Here's my first non dairy non beef or lamb recipe!
Toss whatever cut of venison you buy in flour and salt and pepper
Brown this off with a little oil and garlic, lardons and shallots.
Add carrots and celery chopped fine.
Add potatoes cut small (optional).
Add a good few splashes of Worcestershire sauce.
Add good game stock or vegetable stock.
Salt and Pepper
Fresh thyme and rosemary
1 bay leaf.
Water to cover.
1 tablespoon of blackberry preserve.
Continue to simmer on the stove top or transfer to the oven for 90 minutes on low,
