Christmas Meringue Wreath
I will so be making this again this year, not least because its Gluten Free and rather pretty! As long as you can make a decent meringue the rest is just art! You can used frozen fruit which then drips down the side and makes things even more messy!
You dont have to use summer fruits! I often do a boozy plum mix and my filling isn't always fresh cream, often I use a mix of vanilla extract, mascarpone and cream cheese with a little sugar! It ends up tasting like custard and I love it!
You can use lemon curd and cream as a lovely filling and decoration with clementines..........get your thinking cap on! Oh and of course some lovely Christmas foliage will certainly take this showstopper to a whole other level!
