Somedays are tough and end with my head in the cupboards wondering, what on earth to make for supper, not really wanting to cook! Often on evenings like these, we go for cheese and biscuits or something we can assembly quickly. Takeouts are difficult for Coeliacs but tonight I fancied home baked Rice Pudding. Oddly, I haven't managed to find pudding rice here, but have been assured that sushi or arborio rice will do and offers a creamier pudding altogether! I'm up for that!
Rice pudding is definitely a comfort pudding, a nursery pudding and can start an argument in our house! It must be baked, have a dark brown skin and be served cold in slices! I know! Me I like it warm with a little cold milk, thanks!
My traditional rice pudding is a very simple affair. Rice, sugar, milk, cinnamon and a knob of butter. Then baked! Thats it!
This time I decided to mix it up a little and used sushi rice, milk, cream and coconut milk, mixed spice, nutmeg, vanilla and a few small knobs of butter. Bake!
The result was very creamy and very nice served with some tinned fruit and sliced almonds!
