Beetroot Pesto Canapés
It's in the shops and probably asking to escape from your veggie patch?

You know how this goes by now, right?
What to 'bloody well' do with it all? Give some to the neighbours.......then what? Eeeeee, how long have you got darling?
All day? Okay then, let's do this!
First up a canapé!
T'is Saturday after all and one can partake in a glass of Apero or ten with a delicate little flower bite, eh?
Always good to have the odd canapé or dip recipe up your sleeves, I feel.
In the processor till smooth....
1 cup red beets chopped and roasted (about 1 medium beet)
3 cloves garlic roughly chopped
½ cup walnuts roasted
½ cup parmesan cheese grated
½ cup olive oil.2 tablespoons lemon juice
Salt to taste
Plonk a dollop on a fancy cracker and add some lush French cheese and you have the beginnings of a jolly good time!
