Recipes with Cheese
Everybody loves this dish. I'm sure.
My first try out was way back when, skiing as a 15 year old in France, of course. Hungry belly sated, I was hooked!
My husband isn't keen, but then he's not a huge potato lover anyway. More for me I guess, eh?
I really like dishes like this from late autumn and through the long winter, when the house is empty, it's just me, a Christmas movie and some wine. The fire is crackling away and I want/need comfort food and I save left over potatoes, for just this occasion! A marriage made in heaven I believe.
Of course simple dishes don't have many ingredients and you more than likely have the makings in your fridge? If you live in France, why wouldn't you?
1/4 cup of white wine
2 tablespoons of creme fresh
equivalent of 3 large potatoes cooked and sliced
6 slices of pancetta or bacon/lardons
1 large onion sliced
a few knobs of butter
salt and pepper
1 round of french cheese such as Reblochon *rind the cheese
Grease a deep pie dish.
In your skillet, fry off the bacon.
Next pop in the onions and sauté.
Now add the wine.
Let the wine evaporate for a minute.
Layer the cooked slices of potato and cheese (saving a thick layer for the top) with the onions and bacon. Season well with pepper, don't over do the salt as the bacon is salty.
Pour over the creme fresh.
Bake for around 15 minutes.
Serve hot with fresh bread.
