My favourite dish autumn and winter, hands down. Really rich comfort food and the french version is somewhat richer,
Classic French Shepherds pie is made with minced beef in a red wine sauce.
Recipe serves a crowd or make mini pies for the freezer
*like a ragu, give the beef sauce time to reduce. Also ensure the mince is the first thing cooked, browned before adding anything else. That way you keep the mince nice and fine.
A little decent olive oil to cook in
1 kg fine ground mince beef
1 large white or red onion chopped fine
1 or 2 garlic cloves minced
2 large glasses of good french red wine or less
1 tablespoon of tomato paste
1/2 pint good beef stock
1 teaspoon of dried thyme and rosemary
sea salt and freshly ground pepper
a little cornflour mix to thicken but i personally just let it simmer and reduce
6 large potatoes boiled (suitable for mashing)
cream or milk
salt and pepper
*you can add french mustard and or cheese if you want?
*use a potato ricer then use a wooden spoon to whip the mash into a very smooth puree.
