That's just how veggie patches operate, right?
Like buses, nothing for months and then suddenly your veggie patch is loving and giving in abundance all at once.
Time to get your pinny on lass and make sure not even an 'ugly bugly' carrot is wasted!
What to do!
Spinach = wilt slightly in a dry pan, cool and freeze in ziplock bags nice and flat! Same goes for herbs. Any left over's need freezing flat in a zip lock! Who invested these, I dont know but my freezer is full of them!
Garlic - roast it with a little olive oil and freeze.
Tomatoes - roast with olive oil and freeze.
Onions? Chop and freeze as is.
Par boil veggies, especially root veg, drain, dry and freeze! You just never know when you will need a spoonful of onion, pepper, butternut squash?
Over growth of lettuce and every one is over salad? Don't cry! Pop it in a broth with chicken, onions and peas! Braised lettuce is a thing you know!
Don't forget the Chook's.....my goodness they love the lettuce!
Feed them Chook's too well and you will have an abundance of eggs!
Make meringues! They keep a while!
Make lemon curd preserve.
Make portuguese custard tarts!
If you don't ask your harvest 'not what it can do for you' but 'what you can do for it'.....there's something amuck!
Get a grip!
