I'm definitely feeling festive now! Although the rain is making me wish for the snow to come back! The dogs are never interested in a wet walk and so I find myself, trawling through my old recipes in readiness for the arrival of my kids in December!
Home for Christmas!
Food will be on their minds and I'm determined to keep my kitchen kudos! This year we won't deviate from the norm, turkey and ham but I may go a bit French and offer up goose for new years day!
Simply chop your veg and herbs and place the goose on top of these. Season the goose and stuff with citrus fruits. Bake for 3 hours and baste regularly.
Then take the goose out to rest. Remove the veg and make the jus by adding stock, wine and cream.
Slice the red cabbage with a large white onion, chopped and two apples, peeled, cored and chopped. Add cinnamon, a knob of butter, a splash of white wine vinegar and some brown sugar! Simmer this with a splash or two of water and don't forget to season!
Serve with sliced potatoes or celeriac puree!
