Slow cooking with TVUFWS
Weekends go too fast don't they?
Sundays should be slow but we often end up racing around to get ready for the week. I often fall into bed of a Sunday night, more exhausted than ever! Maybe thats why I don't like Mondays!
Life does get in the way and we still need fodder! So take it slow, doesn't matter the season.
Here's the recipe:
1.5lb Beef rib
A little cornflour
3 beets peeled and chopped
1 pepper sliced
2 Onions sliced
2-3 Tomatoes (chopped) plus a 400 g tin of crushed tomatoes
2 Garlic cloves chopped fine
1 tsp coriander powder
½ tsp cayenne pepper
1 tsp cumin powder
1 tsp whole black pepper
1 tsp whole cloves
1 1-inch cinnamon stick
2 bay leaves
Salt and pepper 1 ½ tsp each
Few sprigs of fresh thyme and rosemary
4-5 cups good beef stock - top up with water if needed.
Brown off the beef with onions, garlic and olive oil, then add the corn flour.
Now add everything else and slow cook for two hours.
