Veggie and GF
Still on the Aubergine theme! Oh yes and still Vegan!
I know right? I'm cooking on gas, literally!
This is a simple recipe really, a bit of dipping and what not but not too much fuss.
You will need:
12 slices of aubergine
then make up LONG SHALLOW dishes of:
GF all purpose Flour
vegan/gf panko bread crumbs with garlic, chopped herbs, chopped seeds & pinches of whatever spice you fancy
top with grated parmesan *vegan
Dip in flour, then spray a little coconut oil on, then breadcrumbs and then vegan parmesan, shallow fry or oven bake.
*If not vegan you can add the egg step.
Serve with Tahini and sweet potato mash!
Tip: You can also make a portobello mushroom version.
