I must admit to still being pretty nervous about GF baking, but the flour blends are already better than a year ago. I now try to re create the taste rather than the look and these scones are no exception. I had to dollop them because the mix is rather sticky. I don't mind as they still tasted of a really decent cheese scone, nice and fluffy in the middle. They were so good I had three! Oops!
Okay so here's my recipe using this French GF flour blend.
800 G of gf flour
6 teaspoons of baking powder
350 g of cold salted butter
salt and pepper
100 g of mixed grated cheese
milk to bind
The mix will be very sticky so do your best to pinch and lightly form a scone shape. Baste with egg wash and sprinkle more cheese on top. Bake for 20/30 minutes at 180. Check the bottoms are firm and the tops are golden before removing from the oven.
Enjoy warm from the oven with a little salty butter!
