Oh how I long for a cheese and onion quiche right now!
Mini quiches are great to take on picnic, I mean, generally finger foods are best for picnics or just take your favourites and shrink them!
So easy with some shop bought shortcrust pastry!
Fill with cooked pancetta, onions and cheese and fill 3/4 full with a custard of 2 eggs, 1 yolk and a mix of milk and cream, about 150 mls. Don't forget to season, sprinkle with cheese oh and bake to perfection! They look perfectly rustic and will be gone in a few seconds!
Shop bought pastry goes a long way doesn't it! great to have a stock in your freezer for those moments of panic!
Finally, but still on the shop bought ready made pastry and mini bakes, here is a quick recipe for sweet egg custard mini tarts!
Using puff pastry this time, fill those mini tart shells with the custard and bake!
4 eggs yolks
1 full egg
3 tablespoons of corn starch
2 teaspoons vanilla extract
125 g sugar
2 cups of mixed milk and cream
1/2 teaspoon of cinnamon
