In my home, my son usually demands my signature Amaretto cheesecake. This pic of my hybrid Apple Strudel Cheese cake, was taken by my old school friend and was my first ever recipe for the launch of Humble Tart Kitchen, over 5 years ago! However he would probably love this one too! So for the cheesecake lover in you life or just because, give my recipe a go!
The strudel topping
a free hand mix of a cup of almond meal/ground almonds or flour, sliced almonds, 50 g chopped butter, 70 g brown sugar, pinch of salt and cinnamon, nutmeg and clove *you can also add soft toffee and or fudge pieces after the bake.
2 small packets of ginger biscuits mixed with some amaretto biscuits *use gluten free if needed
120 g of melted butter
Apple baked cheesecake
300 g of mascarpone
600 g of cream cheese
100 mls of whipped double cream or sour cream
2 teaspoons of vanilla extract or apple brandy
3 eggs and 1 egg yolk
pinch of salt
3 tablespoons of icing sugar
1 tablespoon of flour (omit for gf)
2 eating apples peeled and chopped into small chunks rolled in cinnamon sugar
Prepare your topping and gently bake/toast on a flat greasing tray or you can add this topping raw for the last 10/15 minutes of baking if you like. Careful not to burn. The other option if to add the topping at the beginning but it will sink in a bit and you will have to cover the top with baking paper for most of the bake to stop burning.
Blast the biscuits in your processor and add the melted butter, combine well.
Line and grease your tin well.
Press the base mix into your prepared large loose bottomed cake tin.
Pop the tin in the fridge for an hour.
Now combine together all your cheese cake ingredients folding in the apples last.
Use a stand mixer or hand mixer to ensure the batter is smooth.
Pour this into your tin and let it settle for a few minutes.
Now find a large roasting tin or similar and fill 1/3 with water and pop your unbaked cheesecake in.
Into the oven now for 1 to 1.5 hours until firm in the middle but not cracked. Oven temp 180/200 fan.
There may maybe a slight wobble just turn the oven off and leave the door ajar for 10 more minutes.
Then cool for uptown 4 hours before decorating.
