I on the other hand, use it for all sorts but I do feel aubergine needs a little TLC to start with! I often gently pre grill it with a little olive oil and seasoning however this dish is baked, so no need to worry!
This dish is super easy and normally I eat the whole thing myself over a couple of days. In the summer I make a fresh tomato sauce but you can use canned. It's simply layers of spicy tomato and basil sauce with a splash of red wine, a layer of aubergine and a layer of grated or cheese sauce and then repeat! The final flourish is parmesan and bake till it's all bubbling perfection! Be careful it's hot!
