This time of year it's what to do with an overload of those darn beans.
The fairy tale Jack and the Bean Stalk....wow don't they grow!
I have to be honest, as I usually am and I don't grow them but somehow without trying I always end up with a basket of gifted beans! So I sneak them in the families food somehow, as not one of my lot would willingly ask to eat them!
I get past the issue by either adding spice or blending them into oblivion!
My two go too recipes are bbq bean chilli and bean and bacon soup! Both recipes are super quick and easy!
BBQ Broad Bean Chilli
200 of pre cooked Broad beans
1 can of red kidney beans
1 large white onion chopped fine
olive oil to cook with
3 cloves of garlic chopped fine
2 teaspoons of dried/fresh chilies
handful of basil
400 g tinned tomatoes blended or use pasata
chilli powder to taste
salt and pepper
1 cup of water
2 tablespoons of bbq sauce (gf)
Simmer for 40 mins and then serve with rice, tortillas or potatoes!
Broadbean and Bacon Soup
400 mls of hot veg stock
1 pre cooked onion
1 pack of sliced bacon chopped and pre cooked
1 clove of garlic minced - cook with they onion
200 g of cooked broad beans
any other veg you fancy such as red pepper
a small handful of parsley
leave a few whole beans to decorate with.
