I was on a fast day yesterday! Just saying!
Blackberry Lavender and Cheesecake
170 g blackberries (frozen or fresh wiz into a compote with a little sugar and water, sift if you don't like the seeds) a couple of whole blackberries to press into the top
Brownie mix 100 g caster sugar 200 g dark chocolate melted slightly cooled 250 g unsalted butter melted slightly cooled 310 g brown sugar 4 large free range eggs 40 g cocoa powder 200 g plain flour 2 tsp baking powder
Mix together dry ingredients in your stand mix then add the wet.
Cheese Cake Mix *swirl this into the top of the brownie mix 225 g cream cheese dollop of greek yoghurt 1 large free range egg 35 g caster sugar or icing sugar pinch of salt Lavender extract and sprigs of fresh lavender
Mix these altogether until smooth
Pour the brownie mix into the lined brown tin first. Then pour/swirl on the cheesecake mix. Swirl in the blackberry mix and add the lavender. Press in a few whole blackberries.
Bake for 55 mins 160/170
