If you are lucky enough to be growing your own fruit, have an orchard or just buy way too many berries, it's simply time to make RUMTOPF.
Anyone who has lived in Germany knows this all year round treat goes a long way!
I serve it warm on ice cream mainly but you can do as you like, there are many uses for your preserved boozy fruits!
Traditionally, your fruit (any fruit) is layered day on day, week by week and doused in rum , sugar and spices! I've used all sorted of booze to preserve my fruit!
Rumtopf jars are pretty expensive but you can use a Kilner jar for a few euros! The bigger the better because once you are into it, you'll just keep adding to it.
The big bonus comes in the winter, when the summer fresh fruit has all but gone but you still have a large jar of boozy fruit! Just add a few extra Christmas spices and the juice and rind of clementines and bingo, you have an instant dessert, or base for a cocktail!
The recipe if there is one is thus:
One cup of sugar per pound of fruit
Any spices you like such as nutmeg, cinnamon, all spice...........ginger
High proof alcohol such as Rum to cover each layer
