Make do and Mend
When this lockdown started, I rushed out and bought loads of frozen produce, rhubarb being my absolute favourite. Not sure I put a lot of thought into how I would use it or what I would do if there was a power cut? Now every time I open the freezer, something jumps out and asked to be used! Okay, challenge accepted and frankly I need the room! So today I grabbed a small bag of frozen peas and broccoli and let them defrost.
So far not terribly hard to pre prepare!
Once defrosted, I whipped up some hot veg stock and blasted the frozen veg with the stock in the blender. I then seasoned, added a little cream, some chilli oil and some basil.
That was that! A meal fit for any hungry stuck miserably at home bod! Actually, it was way scrummier than I expected and cheap as chips!
