Much room for mushrooms?
It doesn't always have to be rice!
If you rather fancy a dish that is earthy and filling but no meat, this is your dish!
Well, you just make as you would a normal risotto!
Melt a large knob of butter and a splash of olive oil
soften 1 finely chopped onion and
1/2 teaspoon of garlic paste and
dried sage or tarragon and
dried mushrooms soaked and drained or fresh and
squeeze of lemon juice
then add 240 g of buckwheat groats
then add 1 large glass of white wine and coat the mix well
400 mls or more of hot veg or chicken stock (add a ladle at a time)
2 tablespoons of sour cream or creme fresh to finish then add
50 g of parmesan
