Tea and Cake
Quintessentially British, we think? Actually, partaking of a mid afternoon cake is very popular the world over!
The tea bit, I will get to later, but first lets start with the cake bit!
Coffee and Walnut, a classic favourite with most people except me! I've never been a big fan of coffee cake or sweets until that is I made it stronger and less sweet!
Here's my recipe for RICH COFFEE AND WALNUT CAKE, also perfect made as a tray bake and served with custard!
for the cake 300 g unsalted butter at room temp 200 g of packed brown sugar
1 tablespoon of coco powder 1 Teaspoon of vanilla extract 3 large eggs 2 strong espresso shots 1 cup of whole milk 300 g of self raising flour 2 teaspoons of baking powder Pinch of salt 1 cup of chopped walnuts also whole for decorating
for buttercream 200 g of room temperature butter Pinch of salt 400 g of icing sugar 1 double espresso
