Firstly wash your hands!
Secondly, make up an olive oil rub of fresh rosemary, thyme, garlic, lemon rind, salt and pepper.

Now get massaging the leg of lamb, stuffing as much fresh garlic and herbs under the skin. Let the lamb sit for 30 minutes.
Now prep your chunky root veggies (onions, potatoes, carrots, turnip) pop these under the leg of lamb and pop in the oven for 1.15 minutes!
Make your red wine mint gravy with the strained lamb juices, adding a little cornflour to thicken!
Serve with a mix of steamed greens.
