For the Meringues
8 large free range egg whites
365 g of caster sugar
2 teaspoons of cornflour
pinch of salt
1 tsp of white wine vinegar
Whisk the egg whites until they are starting to soft peak then gently add the sugar. Add the cornflour etc half way through. Once you can turn the bowl upside down and the egg mix is barely moving, you are ready to pipe!
Mark out your circles on parchment paper and pipe the circles in and then fill the centre and continue upwards.
Heat oven to 180 then reduce to 140 for 1.5 hours. Switch the oven off, leave the door slightly ajar and let it al cool down naturally.
For the custard
Use thick vanilla custard and pipe it
mix vanilla cream with mascarpone and a couple of dollops of thick custard and pipe
I often layer my meringues with lemon curd first or use a berry compote
