Did you get busy last year, canning every kind of fruit known to man? If you did and like me you bought a ton of figs, then made jam which sat unused, this is the tart for you and its very simple.
I would recommend that you take some time to make a decent sweet shortcrust pastry. The pre made stuff isn't that good for a jam tart really and we are after a more British buttery, crumbly pastry really.
300 g plain flour
150 g butter (cold and chopped)
80 g of icing sugar
2 egg yolks
pinch of salt
up to 2 tablespoons of iced water if needed
The easiest way to crumb the mix before the yolk and water is to blitz in a processor. Then add the egg yolks and if needed tiny amounts of water until you are able to form a firm dough.
Wrap in clingfilm and pop it in the fridge for at least an hour.
Roll and cut to size, save some pastry for decoration.
Please do par bake the pastry case for 20 minutes on a low oven. Pop some parchment paper on top of the pastry case and fill with baking beans.
Now fill with your tart with Jam of choice and bake for 30 minutes in a medium oven. Don't forget to egg wash the top decoration and case sides.
Serve with custard!
