How fortuitous! I found a packet of frozen spinach at the back of the freezer erm.....years ago! Sorry, this is an old recipe of mine, but one you may find helpful when having a 'war wife' week! By 'war wife' I mean not buying anything much if you can and using everything you have left! In other words clearing the fridge and freezer!
I always used to have a frozen packet of filo pastry, oft bought for high days and holidays but rarely used! Coupled with the spinach, what to do?
So here we go!
Defrost the spinach in a colander. That ensures you don't have too much liquid to deal with.
Break up some feta cheese.
Cook off some onions and garlic.
Season well, remembering feta is salty.
Add a few sun-dried tomatoes and tinned roasted peppers if you fancy and of course if you have some in your pantry.
Mix everything lightly together with a couple of beaten eggs.
Carefully unroll your pastry and brush lightly with oil or melted butter.
Line your tray with parchment paper and lay a few layers on the tray, spread the filling out as evenly as you can manage and top with more layers pastry. Brush with a little oil or butter and bake!
