Fish Cakes and Triple Cooked Chips
Friday are made for these eh? A marriage made in comfort food heaven! I concur!
What to go with? Mushy peas, beans, bread and butter maybe?
Definitely a cuppa tea!
Here we go:
Firstly bake your large scrubbed potatoes around 400 g. Whilst they are baking simmer/lightly cook your fish in milk with bay leaves and seasoning.
Scoop out the potato flesh and pop into a bowl.
Drain the fish, remove bay leaves.
Add together with the lemon rind, parsley, chives, a small dollop of french mustard and mix well.
Let the mix cool in the fridge
Now plate up the beaten egg, flour and breadcrumbs in separate flat dishes.
Make patties out of the fish and potato mixture and pop into:
then on to your prepared baking tray for baking or shallow fry!
Triple Cooked Chips
Prepare your potatoes by peeling and letting them sit in water for an hour.
Drain and dry.
Par cook. Drain and return to the pan to shake a little and fluff up.
