The light on this pic makes it look like normal pasta, but it is in fact brown rice pasta and Gluten Free. I usually use a chap in Canada (Nudl artisan pasta) who sells the best GF fresh pasta or the pasta flour mixes. I also use his pasta finishing salt which really makes the pasta sing! I discovered him and his pasta at a GF market in Toronto! I hadn't tasted decent pasta in over a year so it was a revelation and a joy! Then when I realized ordering from him meant driving and hour and a half each way, I decided to make my own.
It doesn't hold together well and you have to watch it cook but it does work! Failing that, try a dry GF pasta or if not GF just use your normal boxed or fresh pasta from the supermarket.
Recipe for Brown Rice Spaghetti (you will need a pasta machine)
1 1/2 cups (7 1/2 ounces) brown rice flour, plus more for dusting
1/2 cup (2 ounces) tapioca starch
1 teaspoon xanthan gum
4 large eggs
Bring together the dough with a wooden spoon and turn out and knead a few times.
Flatten the dough and pop it in bits throughout the machine on the widest setting twice each piece. Keeping changing the settings until you get the desired effect. Do not use the finest setting for spaghetti as the dough is fragile.
Dust your pasta and cook when ready. Bear in mind it cooks quickly, in less than 5 minutes.
6 cloves pre roasted garlic. squeeze out the pulp
a few slugs of extra-virgin olive oil
handful of GF panko bread crumbs *OPTIONAL (I rarely use these)
1/4 tsp chilli flakes
1 tbs butter
anchovy filets, minced *OPTIONAL (I'm not keen so I don't bother with these)
Juice and zest of 1/2 lemon
2 tbs freshly grated Parmesan (optional)
Freshly chopped parsley
Fresh red chillies
Make this is a a flat bottomed non stick pan.
Cooke you pasta and drain, leaving a small amount of pasta water then add spaghetti to the sauce! Et Voila!
