
Simple Sundays.........simply sweet and tart!
you can make these quick with a cookie crust as you would a cheesecake or make an almond flour crust:
200 g almond flour
80 g sugar
20 g cornflour
pinch of salt
90 g of cold butter
Work this mix as you would scones or use the processor.
Press into your prepared tray and bake until golden brown.
Cool.
Filling
Whisk together
2 or 3 large eggs
80 g lemon juice
15 g cornstarch
200 g of sugar
pinch of salt
lemon rind
Pour over the crust. Bake until the mix appears set. Cool, cut and decorate.
