Normally, I make frittata pretty bulky and cross my recipe with that of a Spanish tortilla. Not this time though as we are in need of healthy sustenance.
Is feta healthy?
Feta is a brined, white cheese with a soft and creamy texture. Compared to other cheeses, it's low in calories and fat. It also contains a high amount of B vitamins, phosphorus and calcium, which can benefit bone health. Additionally, feta contains beneficial bacteria and fatty acids.
Fabulous and we don't need to use much!
I used some spring cabbage, spinach, spring onions, kale and parsley.
Basically this meal is a fancy omelet with extra bumf!
The easiest way to make it is in an oven proof skillet. Then transfer it to the grill to brown the top which saves you having to turn it out using a plate!
To cut down on calories, I use more egg white than yolk.
You will need
6 eggs and 4 egg whites
salt and pepper
small amount of finely sliced greens and herbs
small amount of feta
Whisk the eggs well with the seasoning and set aside.
Get the greens and herbs moving around in the heated, oiled skillet to soften.
Pour in the egg mix and move from side to side - this will ensure the mix is evenly spread and fluffy.
Now add dots of cheese and transfer to the grill to complete the cooking.
Using oven gloves, turn the frittata out on to a warm plate and serve!
