Red lentil and tomato curry
We want substantial food in January but we really don't want the calories. I personally don't want to feel hungry or that I've eaten a dull, tasteless meal. I know you feel the same! We are halfway through the first back to work in January week and being good is getting tough already, isn't it?
With a little imagination your plate of food this Wednesday will be very tasty! Here's how!
Red lentil Curry with coconut and tomato
You will need
1.5 cups of soaked red lentils
1 onion finely sliced
salt and pepper
2 teaspoons of coconut oil
garlic and ginger
1 large can of crushed tomatoes
25 mls of veg stock
1 can of full fat coconut milk
Heat your pan and add the coconut oil, onion, garlic and ginger. Cook until softened.
Now add the drained lentils. Cook for a few minutes.
Now add the curry paste and toss to coat.
Finally, gradually add all other ingredients and simmer until thickened and the lentils are nice and soft.
