Feel good food!
In January, I go a little mad for simple food. What I ate over Christmas was indeed delicious but rather rich and too much of it, I'm afraid! I still don't feel up to anything but decent, old fashioned stews or soups really and that's fine! Sometimes, I think we feel under pressure to over complicate it all! Pork is also one of the cheaper meats these days, which after a season of spending too much, good value is what we want!
Start by gently browning your pork cubes in a knob of butter, then continue cooking with a decent beef or pork broth and add root veggies with onions. Add a little garlic, a bay leaf, thyme and rosemary. If you want to, you can add a glass of white wine after growing the pork.
Transfer to the oven, I don't add flour or cornflour to thicken but you can. I rather prefer a chunky soup consistency.
If using a pork tenderloin the pork won't need too much cooking so best to use a shoulder cut for slow cooking.
Add some fresh parsley to finish!
