
You've probably not eaten a lot of fish during the holidays and if you have it was possibly seafood? Time to get some Omega 3 into our foggy brains! My recipes aren't DIET recipes per-say, but more good for you food, balanced, tasty recipes. Over the course of of the awfully long month of January, I will help us all by sharing my recipes to help reduce your post Christmas bloat and help the waistline a little, Hope it helps.

Cod, chorizo and bean stew
Firstly, think portion control. How many people are eating? You will need one portion of cod per person and around 4 thin slices of chorizo per portion of fish.
This is an al in one stew, so not much prep needed really.
Get used to using a brush to spread your olive oil rather than glugging it in!
Use a heavy bottomed pan and this dish can be baked or done on the stove but I prefer the baked version.
Place your fish in the pan. Season and lay the chorizo on the top, drizzle with a little lemon, olive oil, seasoning and herbs.
Now place any pre cooked veg and beans around your cod and add a little fish, chicken or veg stock. Herbs such as oregano. A little lemon juice and a large tin of chopped tomatoes, optional.
Bake.
Just resist the temptation to mop this all up with a hunk of bread!
