Sometimes the most simple of ingredients is all you need to make the most divine repast. filling, tasty and homely, this baked bean stew costs barely a penny, especially if you grow your own beans. Even if you don't have a garden, you'll definitely have a tin of beans languishing in your store cupboard? Surely!
Of course you could simply open a ready made can of beans, but I can assure you they want taste half as good as these!
If using fresh beans par cook these in a some thyme veggie stock first. Next chuck a tin of decent chopped tomatoes, a few squeezes of tomato paste, a little seasoning and a slug of olive oil and finally the bean stock. Whiz this all in the blender. Gently stir in the beans and transfer to your oven dish with lid. Let them bubble away for 30 mins or so. Serve with sliced meats and fresh bread!
