Simply shredding the leftover lamb. I'm a real cheat and use a tikka paste I buy when I'm back in UK, however, I will give you the full recipe here just in case you can't access a decent paste. Alternatively you can mix a madras paste with yogurt which is also pretty tasty!
When I'm making a biryani I always cook the basmati rice, drain, wash in hot water and then set aside for a few hours. Do not over cook. Make sure you can run a fork through the rice to easily separate the grains. I add a little saffron if I have it, crushed cardamon pods, fresh chillies, coriander and fried onions to the rice with a little melted butter.
You can make your own curry paste with curry powder, garam masala, tomato paste and lemon juice or curry powder and yogurt.
Now toss the cooked shredded lamb in a little oil, ginger, garlic, onions and a little cinnamon, then add a dollop of which ever paste you fancy.
Transfer to a wok or large pan in batches and toss together.
