You will need
1 1/2 cups of grated carrot
1 cup of maple syrup or 100 g of golden sugar (add more if you have a sweet tooth)
3/4 cup of coconut oil or 175 g of butter
1 cup of pumpkin pulp (squeeze out any liquid best you can)
3 teaspoons of homemade pumpkin spice or mixed spice/cinnamon and nutmeg
1 flat teaspoon of baking powder
250 g of self raising flour
3 large free range eggs
Pecans for decorating
Dried sunflower seeds for decorating
The recipe can be all in one! Stick it in the stand mixer and go for it!
Pour the batter into your cupcake wrappers and bake at 170 for 25/35 mins.
