That's a lot of veg!
I know but so comforting at the end of a long walk on chilly day! As I'm not a huge fan of pumpkin on it's own, I'd rather add a few other ingredients to it!
Such an easy recipe! Not giving you the exact amounts, as I use bits and bobs, differing amounts each time. You can learn to balance the flavours to your own taste.
Roast your pumpkin, tomatoes (remove skin), garlic (roast in skin then remove), roasted pepper (remove skin) and carrots till soft. Only use a little olive oil as you don't want the soup to be greasy! Then blend these with decent vegetable stock, tiny squeeze of lemon juice, season well and blend! Add a little cream if you like, dried chillies and a sprig of rosemary and tuck in!
