Well it is in my house! I adore it. Possibly my favourite fruit hands down!
My main recipe is always my ginger and rhubarb compote for the dolloping on yogurt and ice cream......! Easily done with rhubarb, ginger, coconut sugar (not much) and a little water and lemon juice. It is very tart, just how I like it! I keep it in the fridge, never lasts long and then mourn till it's Rhubarb season again.
I often roast rhubarb with a little sugar as above and pop it on freshly made panna cotta or use it in a mascarpone trifle filled with amaretti biscuits.
