Sometimes you aren't in need of the faff! All you actually want is to catch up with your loved ones and pour a glass of wine whilst doing the minimum in the kitchen!
You will need
250 g wholewheat penne pasta cooked
a punnet of cherry or baby plumb tomatoes
3 shallots or a red onion chopped fine
2 large cloves of garlic minced
1 tablespoon of olive oil
salt and pepper
1/2 teaspoon of chilli flakes
juice of half a lemon (add more if you want)
2 teaspoons of mediterranean seasoning
2 teaspoons of dried basil or use fresh
100 g of more of frozen peas
as many cooked or uncooked prawns as you fancy
70 g of finely grated parmesan
sauce your onions and garlic in a splash of oil and lemon juice, add the tomatoes, peas, herbs and spices. Add more oil and then add your prawns and cook for a few minutes. Add your parmesan. Finally add the penne to the pan and coat well in the prawn and pea mix! Serve!
