Yeah to days when we actually have an abundance of time to cook, but not the full suite of ingredients available! With an enforced stay at home and not feeling fabulous but still needing eat, means one thing.......cupboard raid!
What to make!
I defrosted a pork fillet yesterday but didn't end up cooking it! Not to worry, I scoured the cupboards for things to make a quick pork curry! I mean a pork fillet slices cooks in no time at all! Perfect.
You will need a pork fillet sliced or other meat/fish or lots of frozen or tinned veg
3 pots of natural yogurt
Splash olive oil
Tablespoon of madras or other curry paste
2 teaspoons ginger paste
2 teaspoons garlic paste
3 teaspoons garam masala
salt and pepper
pinch dried chillies
2 tins of mixed veg and the water they are in *OPTIONAL
microwave instant coconut rice
Onion chopped fine
Tip: if you are using other meat cuts ensure you slow cook your dish!
