One pot cooking is such a joy at any time of year!
We put away the slow cooker as soon as there is a spit spot of Spring in the air, don't we? I don't actually own a slow cooker because I've generally had an AGA to cook in! Still, what ever the season, I still love a one pot or tray bake for the ease. We all have other stuff to be doing and hot kitchens aren't the best!
Clare did a roast chicken dinner the other day and ever since then, I've been fancying one but not all the work, the dishes or the washing up!
So our supper tonight is a cheeky cheats chicken one pot!
It's not really a recipe just some rubbing and rough assembly! We can manage that any time of year?

I guess you could par boil the potatoes if you wanted but as long as they aren't smaller or larger than the chicken thighs, all will be well, no need to faff. Veggies should be root and you can add some shallots if you like! Softer, quicker cooking veg, such as broccoli doesn't really work here!
I rub the chicken in a little melted butter and some salt and pepper. For extra taste, you could add lemon, garlic, lemon juice or rind and paprika?
I roll the seasoned veggies in olive oil and that really is it, other than adding the peas near the end of cooking time with a knob of salty butter!
Should you want a little gravy at the end, just remove the cooked chicken and veg, return the dish to the stove with a splash of white wine, some herbs and a dollop of sour cream and you are done!
