Chicken Mushroom and Spinach Lasagne
Tomorrow, Monday is the equinox here in Canada. Or as the lady on the radio said 'the last day of summer'.
We've just walked the dogs in the woods and crunched through the early fallen leaves, but it's a gloriously sunny day. Mornings are cooler and the nights are already darker and time to think about chopping wood for the fire.
Wont be long now until we will be hearing the H word then the C word and then suddenly begin hurtling into 2020!
Time flies. Even more reason to enjoy these last few warm days.
What to cook?
Why a really easy Chicken Mushroom and Spinach Lasagne, thats what! Sooooo easy!
You will need fresh Pasta sheets or GF Pasta sheets
For the sauce
A mix of (test this as you go and season to taste)
The meat sauce
Marinara sauce (home made or shop bought)
Homemade Marinara sauce recipe
Extra-virgin olive oil
1 Medium onion, minced
4 cloves garlic, thinly sliced
1 can whole tomatoes
1 tsp dried oregano
Pinch red pepper flakes
Salt and pepper
Freshly ground black pepper
Small bunch of fresh basil
