It's okay to miss things from home, especially family and food!
We are chatting about the things we miss from home! I know I miss quite a lot of foodie bits! So today I'm concentrating on Britain and Australia. More later!
you will need
350 g of strong bread flour
100 ml milk
30 g of salted butter
7 g of fast action yeast
1 to 2 tablespoons of caster sugar
1/2 tsp of mixed spice
75g of mixed dried fruit
1 egg for egg wash
Warm the milk and butter and then cool with 100 ml of water.
Pop all the dry ingredients in a bowl and mix.
Pour the milk and butter mixture in and mix with a spoon then your hands to bring it together.
Now knead it for 5/6 mins.
Place in a clean but oiled bowl and cover.
The dough will double in size after about an hour and a half.
Meanwhile, line the baking tray.
Tip the dried fruit into your dough bowl and knead again.
Cut into 6 even sized balls. Pressing them down slightly, making the tea cake shape.
Place on the prepared tray and make sure you leave a gap between them.
Cover the tray with oiled cling film for another hour.
Heat the oven to 200c.
Brush each cake with egg wash.
Bake at the top of the oven for 20 minutes.
To serve, split, toast and butter!
