There's really no effort needed!
I poach the chicken or prawns in the coconut curry! Slice the chicken thinly to ensure it takes minutes to cook!
For the broth
coconut cream and milk
veggies, such as baby sweet corn, snap peas, red peppers
salt and pepper
wedges of lime
Thai green paste (buy or make your own)
Thai green curry paste uses fresh, green chilies to create a paste that is spicy and floral with a well-balanced sweetness and acidity.
Combine green chilies, garlic, basil, shallots, lemon grass, and ginger in the bowl of your food processor. Pulse to finely chop. Add the lime zest, 1 tsp lime juice, salt, and a little sugar
Serve with sticky Thai rice.
