I am so craving cake right now, even a smidge would do! As it's UnFrench Paula's 50th birthday today, I'm breaking the HEALTHY thing!
Here's a great cake for tea with your friends!
You will need
500 g of fresh plums stoned and sliced
1 or two large thumbs of fresh ginger grated
1/2 teaspoon of ground cardamon
1 teaspoon of vanilla extract
1 teaspoon of mixed spice
1/2 teaspoon of ground ginger
175 g of butter softened
175 g of light brown sugar
140 g of golden syrup
3 eggs beaten
200 mls of milk
300 g of self raising flour
1 teaspoon of baking powder
mix all dry in one bowl and all wet in another bowl and combine. Pour into the pre prepared tin and arrange the plum slices on the top.
Bake in a medium oven for 40 mins.
Cool a little and serve with a dollop of fresh cream!
