Okay so we are starting to feel the lack of carbs in January! Time for a little treat!
1/4 cup of coconut oil melted or veg oil
1 cup of plant based milk
1 tbs of apple cider vinegar gf
1/2 a cup or more of pure maple syrup
1/2 teaspoon of vanilla extract
pinch of salt
1 1/4 cup of ground almonds
3/4 rolled oats gf
1 1/4 cups of GF flour measure for measure
2 teaspoons of GF baking powder
1/4 baking soda
1 cup of fresh berries
You can do this as an all in one mix, folding the berries in last.
Pour into your muffin wraps 3/4 of the way up and dress with almond shavings! Bake at 170 for 25 mins or until golden brown and bouncy!
