The one thing I do love about January is it is clearly SOUP for days!
Big, Chunky, hearty soups to warm us through and fill us up! I find it so relaxing to stand there chopping veggies, knowing that sometime later, after a dog walk maybe, I will have pure sustenance. Sustenance that goes straight to the heart of the matter! My empty belly!
There's something about a soup that makes me feel instantly better and on the road to recovery. Doesn't matter if I need it or not, soup really is a hug in a mug!
This isn't a recipe, really, no soup should be!
You start with a vegetable stock and go from there, right?
You will need
1.5 pints of veg stock (home made is best)
1 large potato peeled and chopped small but chunky
2 cloves of garlic chopped fine
salt and pepper
a dash or two of oil oil
a cup of buckwheat groats
parsley and any other winter herbs you fancy
cherry tomatoes (whole) let these pop in the soup
Simmer until the potatoes are soft
