A little kick of sweet spice!
What to do with pork mince?
It all gets a little stale sometimes doesn't it?
This very simple recipe is just a few ingredients and served with a fresh fried egg or two!
The key to this dish is a little caramelization!
Y0u will need
oil for frying
400 g of pork mince
salt and pepper
1 teaspoons lemon grass *optional
1 thumb of peeled grated ginger
2 cloves of garlic minced
a few fresh basil leaves or use dried
1 or 2 hot chillies sliced thinly
a dash of fish sauce
1 onion or a couple of spring onions sliced
1 tablespoon or less of brown sugar
Pop some oil in your medium hot frying pan with the garlic and ginger and get them moving. Then add the pork and some of the onions, chillies and brown a little, now add the sugar and caramelize. Finally add the fish sauce and run the pan on a low heat until there is no liquid left. Serve.
